In our challenging daily life, we place increasingly high demands on our food and especially baked goods when it comes to quality and availability. In order to meet this range of requirements, it is particularly important to know the quality of the raw materials and to react according to their fluctuations. Enzymatic solutions have been favored for many decades in order to achieve consistent product quality. The analysis of the various enzymes in the laboratory plays an important role here.

As a manufacturer and supplier of Bakery Ingredients and Bakery Solutions for a wide variety of customers with high standards of quality and continuity, CSM has implemented customized enzymatic analytics in the R&D department for bakery ingredients at the Bingen am Rhein location.


In the course of your Master’s thesis, you are going to:

  1. Characterize different classes of enzymes using biochemical assays.
  2. Establish biochemical assays and standardize them for internal usage.
  3. Benchmark new enzymes against their old counterparts and decide their viability for use in baking products.
  4. Look at the effects of enzymes on baked products.
  5. Get a deep look inside a global company and its everyday business.

Required skills:

  • Student in the field of biotechnology/chemistry/ biology or similar
  • Good knowledge of Excel
  • Good English knowledge
  • Laboratory experience necessary
  • Reliability, independence and time flexibility round off your profile
